Jump to RecipeOne of my favorite beverages of all times is a homemade chai tea latte. With so much depth of flavor and warmth, it is my go to fall drink. I seem to shy away from it in the summer because to me it is just not the same iced. So as soon as that temperature starts to dip, you bet you’ll be able to find me with a chai tea latte in hand.
The base of what makes a chai tea latte so delicious is a blend of five spices. And I thought to myself, if I’m blending together these spices for a latte I could also use them to make delicious fall infused foods. I’m thinking cookies, quick breads, muffins… But for starters I made this oatmeal and let me tell you… YUM!
Oatmeal has always been one of my favorite breakfast foods. It is hearty, filling, healthy, and there are so many different flavor combinations (like my chunky monkey oatmeal or my overnight coconut milk oats) that it never gets boring!
I decided to try my take on a chai spiced oatmeal and it was SO delicious that I had to share! With the perfect combination of homemade chai spice, pecans, and brown sugar it is the perfectly satisfying breakfast to warm you up on a chilly fall morning!
How to Make Homemade Chai Spice
Chai spice blend is a simple mixture of 5 spices…
-Cinnamon
-Ginger
-Cardamom
-Nutmeg
-Clove
Simply blend these all together and you have a chai spice mixture that can be used to make chai lattes, in baking, or in this vanilla chai spiced oatmeal!

Vanilla Chai Spiced Oatmeal
Ingredients
- 2 Cups Oats
- ½ Cup Chopped Pecans
- 2 Tbsp Brown Sugar
- 2 Tsp Chai Spice Mixture See below
- 1 Tsp Vanilla
- Almond Milk
Chai Spice Mixture
- 2 Tsp Cinnamon
- 2 Tsp Ginger
- ½ Tsp Cardamom
- 1 Tsp Nutmeg
- ¼ Tsp Clove
Instructions
Prepare Chai Spice Mixture
- Mix together all ingredients. Store in an airtight container.
Make Vanilla Chai Spice Oatmeal
- Bring 3 1/2 cups of water to a boil. Add in the oats and reduce to a simmer for 5 minutes, stirring occasionally.
- While the oatmeal is cooking, place pecans in a dry skillet over medium heat for 5 minutes (or until fragrant and beginning to brown) stirring frequently. Set aside.
- Once the oats are cooked, remove pot from the heat and stir in the brown sugar, chai spice mixture, and vanilla.
- Divide out oatmeal and top with almond milk (I used vanilla almond milk) and sprinkle with toasted pecans.
