One December I went to my Aunt’s house and one morning she whipped up this chunky monkey oatmeal and I couldn’t get enough! Ever since then it has become a staple in our kitchen.

  • Peanut butter, banana, and chocolate is a classic flavor combination that works so well in this oatmeal dish.
  • Oatmeal is a perfect breakfast choice because it is a great source of fiber and protein, which can help keep you feeling full and satisfied until your next meal.

Ingredients

  • Oats: Large flake oats cook perfectly in this dish. Other oats (such as steel cut oats) can be used but cooking time will need to be adjusted accordingly.

How to Make Chunky Monkey Oatmeal

This recipe is so easy!

  1. Add water, oats, and banana to a pot on the stove and bring to a boil.
  2. Stir continuously.
  3. Remove from heat and stir in peanut butter.

Sprinkle chocolate chips on top immediately for melty, delicious goodness.

Tips & Tricks

Stir frequently while simmering (almost continuously) as the banana becomes sticky and can easily burn on the bottom.

Sprinkle the chocolate chips right away to have them get a little melty which ups the deliciousness!

Ingredients

  • 2 cups water
  • 1 cup large flake oats
  • 2 bananas sliced, divided
  • cup peanut butter
  • ¼ cup chocolate chips

Instructions

  • In a medium saucepan add water, oats, and 1 sliced banana. Bring to a boil.
  • Once boiling turn to a simmer. Simmer for 3 minutes, or until oats are cooked, and stir frequently.
  • Once oatmeal is cooked remove from heat. Stir in peanut butter.
  • Dish into 4 bowls and sprinkle with chocolate chips immediately. Add remainder of sliced bananas on top.
