I am always looking for easy and healthy breakfast ideas, that both me and my toddler will love, to get us through the week. These baked oatmeal bars hit the spot!

Ingredients
- Rolled oats – rolled oats or old fashioned oats hold their shape better and I think have a better texture. You can use quick oats in a pinch. Or for a spin on this recipe, try baked quinoa!
- Milk – use your favorite milk. Non-dairy milks work well in this recipe!
- Brown sugar – you can reduce if you prefer your baked oatmeal less sweet or are trying to reduce sugar for little ones.
- Butter
- Eggs
- Cinnamon
- Vanilla
- Baking powder
- Salt
You will also need a mixing bowl and a 9×9 baking pan.
Baked Oatmeal Variations
There are so many ways to customize baked oatmeal to your liking! A few of my favorite combinations are:
- chocolate chips & banana
- a swirl of peanut butter
- apple chunks
- a sprinkle of berries like blueberries, raspberries, or blackberries

Tips and Tricks
Bake right away once you’ve mixed together. The longer the mixture sits before baking the more milk the oats will soak up and risk becoming mushy.

Easy Baked Oatmeal
Equipment
- 9×9 baking pan
Ingredients
- 3 cups rolled oats
- 1 ½ cups milk
- 1 cup brown sugar
- ⅓ cup butter melted
- 2 eggs
- 2 teaspoons cinnamon
- 1 ½ teaspoons vanilla extract
- 1 teaspoon baking powder
- ½ teaspoon salt
Instructions
- Preheat oven to 350°F.
- Spray a 9×9 baking pan with nonstick spray.
- Add all ingredients to a medium mixing bowl, mix until well combined. Spread into a 9×9 pan
- Bake 35–40 minutes, until the center just sets.
- Cool for 5 minutes before serving.
