Whipped Ricotta Toast
I have loved ricotta for a long time but tend to forget about. I had a version of whipped ricotta that inspired this toast and I have never looked back. It’s SO simple yet so delicious. Whether you are whipping up a snack for yourself or serving for an elegant brunch, this recipe is sure to be a hit.

- Prepare in the amount of time it takes to toast your bread.
Ingredients
- Ricotta Cheese: Use full fat ricotta for the best results.
- Olive Oil: You can leave this out if you prefer, but I find it gives the whipped ricotta a richness.
- Artisan Bread: Use your favorite crusty bread. I love to use homemade no knead bread, but any crusty bread, or even French bread, will work.
Ricotta Toast Toppings
- Honey & Pistachios (add a pinch of sea salt to take it to the next level)
- Sliced Strawberries
- Citrus Zest (lemon or orange or both would be delicious!)
- Peach Slices
- Blueberry Compote
- Balsamic Glaze
- Fresh Herbs (thyme & honey would be a wonderful combo)
- Cherry Tomatoes & Basil
- Olive Oil Drizzle & Fresh Ground Pepper
- Roasted Mushrooms
How to Make Ricotta Toast
Do you have to whip the ricotta to make ricotta toast? No! In a pinch you can spread ricotta as is onto your toast. But you can whip this ricotta in the time it takes your bread to toast and it really takes this dish to the next level!
- Add ricotta and olive oil to food processor and pulse until fluffy.
- Toast artisan bread.
- Spread whipped ricotta over toast and add toppings as desired.
Store leftover whipped ricotta in an airtight container for up to 3 days.

- 2 slices artisan bread
- 1 cup ricotta
- 1 tablespoon olive oil
- toppings as desired
Instructions
- Toast the artisan bread.
- Add ricotta to a food processer and pulse for 1 minute, or until fluffy.
- Spread whipped ricotta over toast.
- Add topping as desired.
