Crispy Smashed Potatoes
These potatoes are everything I dream of in a side dish. Crispy, garlicky, cheesy goodness.

Ingredients
- baby potatoes: any baby potatoes will work just fine in this recipe. Fingerling potatoes will also work.
- parmesan cheese
- butter: unsalted butter is recommended to have better control over the overall salt content in the dish.
- Italian seasoning
- garlic powder: fresh garlic has the tendency to burn so this recipe uses garlic powder.
- salt: if using salted butter, omit the salt.
You will also need a pot to boil the potatoes, a baking sheet, and a glass to smash the potatoes.
How to Make Parmesan Smashed Potatoes

- Boil the baby potatoes until fork tender.
- Toss boiled potatoes with garlic butter mixture.
- Place on a baking sheet and SMASH!
- Roast until crispy and a slight crust has formed.

Store any leftovers in an airtight container for up to 4 days.
The best way to reheat leftover parmesan smashed potatoes is to pop them into the air fryer for a couple of minutes. They become so nice and crispy! Alternatively, you could pan fry them until heated throughout.

Equipment
- baking sheet
Ingredients
- 1½ pounds baby potatoes
- ½ cup shredded parmesan cheese
- ¼ cup melted unsalted butter
- 1 tablespoon Italian seasoning
- 1 teaspoon garlic powder
- salt to taste
Instructions
- Preheat oven to 400℉.
- In a large pot, add the baby potatoes to cold water.
- Bring potatoes to a boil. Reduce to a simmer and cook for 15-20 minutes or until fork-tender.
- In the meantime, in a medium bowl mix Parmesan, melted butter, Italian seasoning, garlic powder, and salt.
- Toss the boiled potatoes with the garlic butter mixture.
- Place potatoes on a baking sheet. Take a glass and gently press each one.
- Drizzle any remaining butter mixture from bowl onto tops of potatoes so they are well coated.
- Bake for 30 minutes or until crispy.
