An Avocado Grapefruit Salad

I had extra grapefruits in my fridge and I was looking for a delicious and healthy way to use them up. I love fruit on salad and this grapefruit avocado salad is no exception! This salad recipe is simple but still flavor-packed!

This makes for a perfect winter salad because grapefruit is in season from November to May when many other fresh produce items are not.

Ingredients

  • lettuce: I use mixed greens for this salad, but swap in your favorite green. Arugula, spinach, or kale all work great.
  • grapefruit: packed with Vitamin C and antioxidants, these give this salad a real health boost! Pink or ruby red grapefruits will work, but red will bring a little more sweetness.
  • avocado: full of heart-healthy fats, avocado adds a creamy, delicious element to this salad.
  • almonds: adds a nice crunch to the salad. Leave them out or swap for sunflower seeds or pepitas (pumpkin seeds).
  • salad dressing: the grapefruit is quite bitter, so a honey vinaigrette helps balance the salad.

Variations: try adding in thinly sliced fresh fennel. Add fresh oranges to the salad for more citrus or sprinkle on some pomegranate seeds. Crumbled feta cheese is another great addition!

You will also need a knife and a salad serving bowl.

How to Cut a Grapefruit for Salad

Segmenting a grapefruit, also known as supreming a grapefruit is the best way to get all of the fruit.

  1. Cut: Slice off the top and bottom of the grapefruit to create flat ends.
  2. Peel: Using a knife, carefully follow the fruit’s natural curve and slice off the skin and white pith.
  3. Free Segments: Use a knife to cut along the membranes, freeing each segment.

Ingredients

  • ¼ cup sliced almonds
  • 4 cups mixed greens
  • 1 medium avocado sliced
  • 1 large grapefruit sectioned

Dressing

  • 3 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • pinch salt optional or to taste

Instructions

  • In a small skillet, toast the sliced almonds until lightly browned.
  • In the meantime, add dressing ingredients to a small jar and shake until well combined.
  • Add the mixed greens to a bowl and drizzle dressing over top. Toss until well combined.
  • Add sectioned grapefruit, sliced avocados, and toasted almonds over top.
