A Simple Carrot and Raisin Salad

This is a classic side dish that reminds me of my childhood and was the perfect way to use up my garden carrots!

  • A refreshing and light side dish ideal for potlucks, picnics, or even holiday meals!

Ingredients

  • Carrots: Choose fresh, firm, and vibrant orange carrots and grate using the large side of a box grater to shred the carrots. You can use a food processor but be careful to not over-process them. Swap the orange carrots for rainbow carrots for a colorful dish! I don’t recommend using carrot matchsticks as they won’t soak up the dressing the same.
  • Raisins: To elevate this dish, soak the raisins in warm water while shredding the carrots. This will plump the raisins up which I love. Try swapping or doing a 50/50 blend with dried cranberries.
  • Dressing: This salad dressing is a simple combination with mayonnaise and sugar.

Variations: Add in drained pineapple tidbits or chunks of shredded apple. For some extra color, stir in chopped broccoli or celery. Sunflower seeds or chopped nuts such as pecans, almonds, or walnuts add a nice crunch.

You will also need a box grater (for the carrots) and mixing bowls.

How to Make Carrot Raisin Salad

  1. Mix all ingredients together.
  2. Refrigerate until serving.

That’s it! It’s such an easy side dish. I think it’s best after sitting for a couple hours, making it even easier as you can make it ahead.

How to Store Carrot Salad with Raisins

Store in an airtight container in the fridge for up to 4 days.
