An Easy Summer Salad
I love salad, I really do. But I don’t often make salads at home because I find they are so labor-intensive. I love this spinach strawberry salad recipe because it uses fresh spinach which you can often find pre-washed and otherwise is not too much work!
- Less than 10 minutes of prep until dinner is on the table!
- It is prepared quickly, making it a convenient option for a healthy and delicious meal or side dish.
- Perfect balance of sweet from the strawberries, salty from the feta, and crunch from the pecans over a healthy bed of spinach.
- Spinach is a nutrient-dense leafy green that is packed with vitamins, minerals, and antioxidants.
Ingredients
- spinach: the star of the show. I typically do not chop the baby spinach, but if your leaves are larger you can chop it into bite-sized pieces.
- strawberries: look for bright red ripe strawberries for best flavor. Switch it up for blackberries or raspberries to use your favorite in-season berry.
- feta: crumbled feta cheese adds a salty, delicious bite. Swap for goat cheese to switch it up.
- pecans: toasted pecans add a nice depth of flavor and crunch to this salad. Substitute candied pecans for a fun twist. Walnuts or toasted sliced almonds also go well in this salad.
- red onion: optional. To take some of the “sharpness” out of the onion, soak in cold water while toasting the pecans.
- balsamic vinaigrette: in a pinch use store bought dressing. Otherwise I love this homemade balsamic dressing or this poppy seed dressing.
Variations: The wonderful thing about salads is they are SO easy to customize to your liking! Leave out any ingredients you don’t like. Or add avocado, oranges, or blueberries. Feel free to add your favorite protein to make this a full meal.
You will also need a small skillet for toasting pecans and salad bowls.
