Easy Cauliflower Rice

I’ve been on a mission to eat more vegetables and have always been curious about cauliflower. While I don’t exactly know if it’s a substitute for everything (mashed potatoes or pizza crust?!), I was shocked at how great of a substitute for rice it really is.

  • A low-carb, low calorie and grain free substitute for rice while being a similar texture.
  • A great way to sneak in more veggies to your day.
  • Neutral in taste making it a great substitute in many recipes.
  • Takes less than 10 minutes to make.

Makes the perfect base for rice bowls like in yum yum bowls or as a side dish.

Ingredients

  • cauliflower: Choose a firm, blemish-free, medium to large head of cauliflower for this recipe. To make this even easier, grab a bag of frozen cauliflower rice and make it lightly fried.
  • olive oil
  • salt & pepper: Just a little seasoning to taste is all it takes.

You will also need a box grater (or a food processor) and a skillet.

How to Make Riced Cauliflower

Making cauliflower rice is surprisingly easy!

  1. Cut off the leaves.
  2. Grate cauliflower.
  3. Saute in a large skillet until slightly tender.

That’s it!

How to Make Riced Cauliflower with a Food Processor

  1. Cut the cauliflower into florets.
  2. In a food processor, pulse the cauliflower until it resembles rice.

Note: to use a food processor to rice cauliflower, you may need to do it in batches to get even rice bits. If you add too much to the food processor at once some of it can get mushy before the rest turns into rice.
