The Perfect Fall Snack
Fall is definitely in the air. I can feel the slight chill in the air, the leaves are turning yellow, pumpkin spice is everywhere… And I am loving every minute of it. As much as I love summer days, I have begun to love the slowdown of fall even more. Life begins to slow down just a little and the beauty of fall I think unparalleled.
On top of all that I LOVE fall cooking! I cannot get enough spice, pumpkin, squash, you name it. On Sunday I bring out my slow cooker and make apple cider or chana masala and pop some maple pumpkin granola in the oven and all of a sudden my whole house smells like fall in the best way.
- Pumpkin spice granola is so easy to make.
- Top on yogurt, eat as a cereal, or simply eat as is as a snack!
- A naturally gluten-free and dairy-free recipe.
Ingredients
- grain: I like to use oats as a base but you could use any sort of flaked grain like flaked quinoa or barley. I also throw in a little bit of uncooked quinoa to give a bit of crunch and some added healthy benefits.
- nuts: this recipe uses pecans as they go well with maple and pumpkin. Any nut variety could be used though!
- seeds: the pumpkin seeds add some extra texture to this recipe, more health benefits, and step up the pumpkin game!
- spice: pumpkin pie seasoning brings the wonderful fall flavors to this recipe.
- salt: salt helps the flavors pop. I don’t recommend leaving it out.
- sweetener: maple syrup is a lovely addition to this fall recipe and brings a great flavor while being easy to incorporate. Brown sugar would be a good alternative.
- oil: the oil is essential in this recipe as it acts as a binder and helps the granola get crunchy. I use extra virgin olive oil as it has more health benefits and a depth of flavor but a standard canola oil can be used.
Variations: this recipe is easy to customize to your liking! For a nutrition boost add some chia seeds or flax seeds. If you are adding dried fruit like dried cranberries, add it towards the end of baking so they don’t become rock hard.
You will need a baking pan and a mixing bowl for this recipe!
How to Make Maple Pumpkin Granola
- Combine all dry ingredients.
- Add wet ingredients.
- Spread on baking sheet and bake as per recipe below.
PRO TIP: I like my granola a little more chunky so I do NOT stir the entire time it is baking. If you want a looser granola, stir halfway through.
