I am always on the lookout for homemade healthy snacks and these mango energy bites are one of my favorite. With simple ingredients and no added sugar, this is a snack I can feel good about.
Ingredients
- Mango: Choose a ripe mango for the best flavor. Swap fresh mango for 1 cup of thawed, drained frozen mango.
- Oats
- Coconut: I use unsweetened shredded coconut.
- Dates: Dates are a natural, unprocessed source of sugar making them a healthy alternative for this recipe and a great source of energy. They are also a great source of fiber and nutrients like vitamin B6, potassium, and magnesium.
You will also need a food processor. My mini processor works just fine!
How to Make Mango Balls
If your dates are firm, start by soaking them in warm water for 10-15 minutes to soften them which helps with blending.
- Add all ingredients to a food processor. Blend until smooth.
- Roll tablespoon scoops.
- Chill mango balls to help them firm up.
If you are having trouble with the blending, add warm water in small increments (about 1 teaspoon) until it begins to process easier.
Aylas Tip: Rolling the mango balls in shredded coconut is optional, but it makes them easier to eat (not as sticky on your hands!) and they look so pretty.
Another option is to drizzle with melted chocolate for a sweet treat you can feel good about.
