Homemade Lavender Syrup
I have always loved lavender but recently become obsessed. I planted two lovely flower bushes in my front garden and I love being able to see and smell them every day. I have become inspired to make all things lavender, and this simple syrup is a great way to use it.

Ingredients
Lavender: dried lavender flowers are small blossoms harvested from the lavender plant. They are commonly used in cooking and baking for their distinct floral aroma and flavor. Lavender, known for its calming effect, adds a unique and fragrant taste to dishes. Be sure to use culinary lavender.
Sugar: using white sugar in a 1 to 1 ratio with water is how to make a classic simple syrup recipe. Try swapping the sugar for honey.
How to Make Lavender Simple Syrup
Making flavored simple syrup, like this rosemary simple syrup, is so easy!
- Rub the dry lavender and sugar together. This process helps release the essential oils and flavor from the lavender.
- Add the sugar mixture and water into a saucepan.
- Bring to a boil and let boil for 1 minute.
- Remove from heat and let steep for at least 30 minutes.
- Strain lavender from simple syrup.
How to Use Lavender Simple Syrup
This lavender simple syrup infusion was originally inspired by my lavender lemonade which is the perfect summer drink.
Add a touch of lavender sweetness to any beverage. Mix lavender simple syrup into iced tea or sparkling water for a refreshing lavender soda. Or try a hot drink like a lavender latte or add a splash to a London Fog.
Put a spin on your favorite cocktails and make lavender mojitos, a blueberry gin cocktail, or try a lavender French 75.
Drizzle lavender simple syrup over fruit salads or ice cream or brush lavender simple syrup over baked goods like cake, cupcakes, or scones.

Simple Syrup Storage
To store simple syrup, first allow to cool completely.
Transfer the cooled syrup to a clean and airtight container.
Store in the refrigerator for up to 1 month.

Equipment
- small mixing bowl
- saucepan
- fine mesh strainer
Ingredients
- 1 tablespoon dried lavender flowers
- 1 cup sugar
- 1 cup water
Instructions
- In a small bowl mix dried lavender flowers and sugar. Rub lavender with sugar with your fingers.
- In a medium saucepan, add sugar and water. Bring to a boil over medium heat.
- Allow to boil for one minute stirring frequently.
- Remove from heat and steep for minimum 30 minutes.
- Strain lavender from simple syrup with a fine mesh strainer.
