The Perfect Quick Dessert
I have always had a love for all things sweetened condensed milk. Magic bars, macaroons, and Vietnamese coffee are a few things I love because I love the flavor of sweetened condensed milk. When I heard you could make a key lime pie with just two ingredients, sweetened condensed milk, and lime juice, I thought it was too good to be true. I was delighted when it worked out!
- This recipe uses only 2 ingredients plus your favorite crust
- Only 5 minutes of prep time
- Can be frozen for a totally different and equally delicious treat!
Ingredients & Variations
- lime juice – you can use either lime juice or key lime juice and will have similar results. Be sure to use fresh lime juice and not bottled. You can also substitute lemon juice in this dessert for delicious lemon tarts.
- sweetened condensed milk
- crust – a graham cracker crust brings this recipe all together! This recipe works well as tartlets as it is quite soft and may not stand up well in a full pie crust when you cut it. I used the graham cracker crust recipe from Sally’s Baking Addiction and made it in muffin liners to easily get them out of the muffin pan.
What is the Difference Between Limes and Key Limes?
Key Limes – Key limes tend to be more yellow-green and are round with thinner skin. They will produce only 2 to 3 teaspoons of lime juice and the juice is known to be very aromatic.
Limes – What is commonly known as a lime is actually a Persion lime. They tend to be more ooblong in shape and a darker green. One lime will produce about 2 tablespoons of lime juice.
The bottom line is either lime can be used in this recipe. Key limes are of course more work because they are so little, but will be slightly less tart.
How to Make Key Lime Tarts
This recipe is as simple as 1, 2, 3!
- Mix together the lime juice and sweetened condensed milk.
- Pour mixture into crusts in muffin pan.
- Refrigerate.
Tips and Tricks
These are best served right out of the fridge. They are quite soft so if they stay out before serving they do not hold up as well.
Freeze these for a perfectly refreshing summer treat.
To make these a little stronger you can mix in softened cream cheese, but they will resemble more of a key lime cheesecake than a key lime pie
