Finding a quick snack that my toddler loves isn’t always easy. Is it just me or do they change what they like to eat every week?! One thing that is a sure hit is these cookies. He thinks he’s getting a treat, and mama is happy knowing he’s having a healthy snack.

Ingredients for Breakfast Cookies
- Bananas: Choose ripe bananas with brown spots to provide flavor and natural sweetness to this recipe.
- Oats: The base of these cookies is oats which makes it perfect for even your gluten-sensitive friends. I use rolled oats but quick oats work too!
- Applesauce
- Milk
- Egg
- Vanilla
- Cinnamon
- Mix-Ins: The sky is the limit for add-ins in these cookies! I often use raisins and chocolate chips to keep them nut-free cookies for school. But chopped pecans, almonds, or walnuts are a great addition to this recipe. Other options that are delicious in these cookies are dried cranberries, coconut, or pumpkin seeds. Sprinkle in some flax seed or chia seeds for added nutrition!
How to Make Breakfast Cookies
These cookies are so simple to make, it just takes one bowl and three quick steps!
- Add all ingredients into bowl and mix well.
- Scoop 24 cookies on baking sheet.
- Bake!

Banana Breakfast Cookies
Equipment
- mixing bowls

Ingredients
- 3 bananas mashed, approximately 1 cup
- 2 cups oats
- ⅓ cup applesauce
- ¼ cup milk
- 1 egg
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 1 cup mix-ins raisins, chocolate chips, pecans, coconut
Instructions
- Preheat oven to 350°F.
- Add all ingredients to a bowl and mix until well combined.
- Place heaping tablespoons onto baking sheet.
- Bake 15-18 minutes or until golden brown.
Notes
- Store cookies in the refrigerator for 4 days.
