Overnight Apple Pie Oats
I love overnight oats (like these tiramisu overnight oats) as a healthy and easy breakfast option and I couldn’t pass up trying this fall inspired version!

Ingredients
- cinnamon apples: a simple combination of apples, cinnamon, and maple syrup. My apple of choice for this recipe is Honeycrisp, but Fuji or Pink Lady are good options too.
- oats: use rolled oats for the best texture and results. Instant oats can turn mushy.
- milk: use any type of milk based on your preferences, such as milk, almond milk, soy milk, or oat milk.
- yogurt: Greek yogurt is a thicker option that adds creaminess and extra protein. Choose plain or vanilla-flavored, based on your taste.
- chia seeds: they absorb liquid and create a thicker, pudding-like texture and are also full of nutrients including fiber, protein, omega-3 fatty acids, and antioxidants.
- maple syrup: adjust the amount to your desired level of sweetness.

Variations: You can add optional ingredients like nuts, dried fruits, nut butter, or fresh berries for extra flavor and texture.
You will also need mason jars to keep the overnight oats.
How to Make Apple Pie Overnight Oats
- Make the cinnamon apples.
- While the apples are cooking, prepare the overnight oats mixture.
- Layer the cinnamon apples and overnight oats.
Store in the refrigerator overnight or for up to 5 days in an airtight container.
Do You Eat Overnight Oats Hot or Cold?
This is totally up to you!
Like banana chia pudding, I like them straight out of the fridge. They are so creamy from the Greek yogurt that I find they eat cold well.
Some people like to warm them up and that works too! Whatever you prefer.

Apple Pie Overnight Oats

Ingredients
Cinnamon Apples
- 1 medium apple peeled, cored, and diced
- 1 tablespoon maple syrup
- ½ teaspoon cinnamon
- pinch sea salt
Overnight Oats
- 1 cup large flake oats
- 1 cup milk any type of milk
- ½ cup yogurt
- 2 tablespoons chia seeds
- 1-2 tablespoons maple syrup to taste
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- pinch sea salt
Instructions
- To make the cinnamon apples, add diced apples, maple syrup, cinnamon, and a pinch of sea salt to a small saucepan. Cook covered on low for 10 minutes, stirring occasionally.
- In the meantime, to make the overnight oats, in a large bowl, mix oats, milk, yogurt, chia seeds, maple syrup, vanilla, cinnamon, and salt.
- After 10 minutes, remove the lid and continue to cook until the liquid released from the apples evaporated, approxiamtely 2-3 minutes.
- Fill each mason jar halfway. Add a layer of cinnamon apples to each jar.
- Fill the mason jars with the remaining oat mixture. Top with the remaining apples.
- Allow to sit at least 4 hours, or ideally overnight.
