A Healthy Snack
When my little one started eating I had so much fun preparing different foods for him. Then after a while it started to feel daunting to come up with new things for him to eat. Enter these muffins. They were easy to make so I loved to make them, he loved to eat them… It was a win win! They have become a staple in our house.
- They are loaded with nutrients from being filled with a variety of fruits and vegetables.
- No added sugar!
- ABC muffins for baby led weaning is a great choice due to how moist they are.
ABC (apple banana carrot) Muffin Ingredients
- apple: my go-to apples for these muffins are Honeycrisp, but Fuji, Jonagold, and Braeburn are all good choices. Avoid mealy apples like Red Delicious, Gala, and McIntosh.
- banana: ensure you are using a ripe banana to add natural sweetness to these muffins and the best flavor.
- carrot
- eggs
- vanilla
- vegetable oil: any neutral oil can be used.
- flour
- baking powder
- cinnamon: this is optional but adds a nice flavor!
I make these in a mini muffin pan so they are the perfect snack for my toddler. If you prefer, you can make them in a regular muffin pan.
How to Make ABC Muffins
- Prepare your fruits and vegetables.
- Mix the dry ingredients and the wet ingredients separately. Then combine.
- Bake the mini muffins.
Ta da! That’s it! These muffins are quite quick to make.
Storing Muffins
These muffins are quite moist so I store a few days worth in an airtight container and then freeze the rest.
These muffins freeze very well! Pop them in the freezer after they’ve cooled and take them out as you need.

ABC Muffins (Apple Banana Carrot)
Equipment
- mini muffin pan
Ingredients
- 1 apple
- 1 banana
- 1 carrot
- 2 eggs
- 1 teaspoon vanilla
- ¼ cup vegetable oil
- 1 cup flour
- 1 ½ teaspoon baking powder
- ½ teaspoon cinnamon
Instructions
- Preheat oven to 350°F and grease mini muffin pan.
- Peel and grate apple and carrot. Mash banana.
- In a large bowl combine apple, carrot, banana, eggs, vanilla, and vegetable oil.
- In a separate bowl combine flour, baking powder, and cinnamon.
- Add dry ingredients to wet ingredients and mix until just combined.
- Fill mini muffin tin with 1 heaping tablespoon per muffin.
- Bake for 13 minutes or until toothpick comes out clean
Notes
- If making full sized muffins increase the bake time to 25-30 minutes.
