This salted caramel chia seed pudding is the perfect option for a quick, easy, vegan dessert!
I was sitting at home craving something creamy for my sweet tooth. Digging through my cupboards I found my chia seeds and knew right away I needed to make a chia seed pudding! I got to making the chia seed pudding but I thought it needed something one step further. I then dreamed up this salted caramel chia seed pudding!
The chia seed is a known powerhouse. It is full of omega-3 fatty acids which have shown beneficial effects such as lowering cholesterol, regulating blood pressure, and preventing blood clots. They are also rich in fibre, protein, calcium, phosphorus, and zinc [https://www.hsph.harvard.edu/nutritionsource/food-features/chia-seeds/]. So in other words this chia seed pudding is totally good for you!
Chia seed pudding can be eaten on its own, topped with fruit, or topped with this salted caramel sauce. The salted caramel sauce is a great option if you’re looking for something a little more indulgent. I love the balance it brings of sweet with just a hint of salty.
How to make chia seed pudding
To make chia seed pudding, whether it’s this one or banana chia pudding, or pumpkin chia pudding, it’s as simple as mixing all the ingredients!
The chia seeds then need time to work their magic. I recommend letting the pudding sit for 1-2 hours however I tend to make the pudding and then let it sit overnight.
You can mix all the ingredients and then distribute into containers and let thicken. However I find it easier to split AFTER it has thickened.
What milk can be used in chia seed pudding?
I find coconut milk makes this dish very creamy and yet still very light. However beyond coconut milk you can use many other choices such as…
- Almond milk
- Cashew milk
- Oat milk (perfect if you need something nut free!)
- Soy milk
How to make vegan salted caramel
After I made the pudding and put it into the refrigerator for thickening, I made the salted caramel.
This salted caramel is made with coconut milk which definitely gives it a coconut flavor. For this chia seed pudding I didn’t mind the flavor but I look forward to trying to make a salted caramel with oat milk or almond milk!
I added all the ingredients in my saucepan and stirred frequently while bringing to a boil. I then allowed the caramel to simmer for 45 minutes. In a rush you could cut this time to 30 minutes or maybe even less and you will get a similar flavor but the caramel will not be as thick.

Salted Caramel Chia Seed Pudding
Ingredients
Chia Pudding
- 1 Can Coconut Milk
- 5 Tbsp Chia Seeds
- 1 Tbsp Agave
- ½ Tsp Vanilla
Salted Caramel
- ½ Can Coconut Milk
- ¼ Cup Coconut Palm Sugar
- ¼ Tsp Salt
- 1 Tsp Vanilla
Instructions
Chia Seed Pudding
- Mix together coconut milk, chia seeds, agave, and vanilla.
- Let sit for 1-2 hours minimum or overnight in refrigerator.
- Divide between 4 containers.
Salted Caramel
- Combine coconut milk, coconut palm sugar, and salt in a saucepan. Bring to boil
- Once mixture is at a boil, reduce heat to low and allow to simmer for 30 minutes
- Remove from heat. Stir in vanilla.
- Allow to cool. Once cool spoon over the already divided chia seed pudding.
