An Easy On-The-Go Breakfast
Overnight oats, like banana bread overnight oats, has been one of my favorite breakfasts for as long as I can remember. They are filling, easy to make, inexpensive, and can be grabbed quickly and take for on the road.

Ingredients
- rolled oats: you can use quick oats but I find they get a little mushier so I like to use rolled oats or old fashioned oats because they hold their texture a little better.
- milk: use your favorite milk here. Almond and oat milk are both great options.
- Greek yogurt: adds a little protein and makes the overnight oats creamier
- canned pumpkin
- maple syrup: add as much or as little as you like depending on how sweet you like your overnight oats
- chia seeds: thickens the overnight oats plus full of Omega-3 fats, fiber, and antioxidants.
- pumpkin pie spice
- toppings: toppings are optional. If you choose to add toppings here are some great options: pecans, pumpkin seeds, hemp seeds, dried cranberries and granola.
To make dairy-free use a dairy-free milk and substitute a coconut yogurt.
You will need a mixing bowl and a jar for the overnight oats.
How to Make Pumpkin Pie Overnight Oats
One of the best parts of overnight pumpkin pie oats is how easy they are to make and you have breakfasts for the whole week!
- Mix all ingredients in a bowl.
- Portion into a jar.
- Refrigerate overnight.

Lasts 5 days in the refrigerator in an air-tight container.
Can you eat overnight oats warm? Sure can! These are designed to be eaten as a cold breakfast, but you can warm them up if you prefer.

Ingredients
- ½ cup old fashioned oats
- ½ cup milk
- ¼ cup plain Greek yogurt
- ¼ cup pumpkin puree
- 1 tablespoon maple syrup
- 1 tablespoon chia seeds
- ½ teaspoon pumpkin pie spice
- pinch sea salt
Instructions
- Combine all ingredients. Mix until well combined.
- Refrigerate overnight.
