I am trying to make healthier choices and eat more protein, but one place I struggle is my snacks! Especially as a nursing mama I am always hungry, and choosing high protein snacks helps curb the hunger and gives my body what it needs. This banana protein muffins recipe is the perfect healthy snack I can grab and feel good about. Bonus, my toddler loves it too!
How much protein is in a banana muffin? Each muffin has 4 grams of protein.
Ingredients
- Oat Flour: Oat flour has nutritional benefits such as higher protein and more vitamins than all-purpose flour (source). For gluten-free muffins, ensure you are using gluten-free oat flour. Note, this recipe has not been tested for all-purpose flour.
- Vanilla Protein Powder: I use Good Protein Vanilla Protein Powder, but your favorite protein powder will work just fine.
- Baking Powder & Baking Soda: Leavening agents to make these a little fluffy!
- Cinnamon
- Salt
- Bananas
- Eggs
- Maple Syrup: I like to use maple syrup as a natural sweetener.
- Vanilla
- Add-Ins: My go-to is chocolate chips so my little can take them to his nut-free daycare, but chopped nuts such as pecans, almonds, or walnuts are a great addition.
You will also need a muffin pan.
How to Make Protein Banana Muffins
- Whisk together dry ingredients.
- Mix wet ingredients.
- Fold dry ingredients into wet ingredients until just combined.
- Add batter to pan, bake until toothpick comes out clean.
Store in an airtight container at room temperature for up to 2 days, or refrigerate for up to a week.

Banana Protein Muffins

- muffin tin
Ingredients
- ¾ cup oat flour
- 1 scoop vanilla protein powder about ½ cup
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon cinnamon
- ¼ teaspoon salt
- 3 medium ripe bananas mashed, 1 cup
- 2 large eggs
- ¼ cup maple syrup
- 1 teaspoon vanilla extract
- ½ cup add-ins chocolate chips, nuts
Instructions
- Preheat your oven to 350°F. Line a muffin tin with paper liners or lightly grease with cooking spray.
- In a medium bowl, whisk together oat flour, protein powder, baking powder, baking soda, cinnamon, and salt.
- In a large mixing bowl, mash the bananas until smooth.
- Add eggs, maple syrup, and vanilla extract. Whisk until well combined.
- Gradually fold the dry ingredients into the wet ingredients. Do not overmix; stir until just combined.
- Gently fold in mix-ins.
- Divide the batter evenly among the muffin cups, filling each about ¾ full.
- Bake for 18–22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
