Instructions
Preheat your oven to 350°F. Line a muffin tin with paper liners or lightly grease with cooking spray.
In a medium bowl, whisk together oat flour, protein powder, baking powder, baking soda, cinnamon, and salt.
In a large mixing bowl, mash the bananas until smooth.
Add eggs, maple syrup, and vanilla extract. Whisk until well combined.
Gradually fold the dry ingredients into the wet ingredients. Do not overmix; stir until just combined.
Gently fold in mix-ins.
Divide the batter evenly among the muffin cups, filling each about ¾ full.
Bake for 18–22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
