Easy Recipe for Watermelon Sorbet
My husband has the ultimate sweet tooth and in the summer he can’t get enough ice cream as a sweet treat to cool him down! I’ve been experimenting with some different options that are a little healthier but still satisfy the sweet tooth.
One of our favorites we make year round is “Banana Nice Cream”. It’s creamy, delicious, and you can throw in whatever flavors you’re craving that day. We started making banana nice cream so often and we needed something else to be able to switch it up. Enter… Watermelon Sorbet!
- Only three ingredients for this sweet treat!
- Is this watermelon sorbet recipe healthy? Yes! It’s just watermelon, lime, and coconut milk. Without added sugar!
- This watermelon sorbet recipe is not too sweet, very creamy, and just the right amount of flavor.
- It’s sure to become a favorite in your household too!
Ingredients
- watermelon: the star of the show! The recipe calls for approximately 4 cups of cubed watermelon, which is roughly equivalent to half of a mini watermelon. Watermelon is a juicy and refreshing fruit with a sweet flavor that pairs well with other ingredients.
- coconut milk: makes this sorbet creamy.
- lime juice: add flavor and helps balance out the creaminess from the coconut milk and makes the watermelon a little brighter!
Variations: mint is a delicious addition and goes well with watermelon and lime. Try switching out the watermelon for strawberry!
You will also need a high-powered blender, a baking sheet, and an ice cream scoop.
How to Make Watermelon Sorbet
- Prep the watermelon: Cube the watermelon into 1 x 1-inch cubes.
- Freeze the watermelon: Place a sheet of parchment paper on a baking sheet. Spread out cubed watermelon on baking sheet. Place in freezer and freeze until frozen.
- Make the sorbet: Once the watermelon is frozen, add watermelon, coconut milk, and lime juice and zest to Vitamix. Blend until smooth. No need to strain, just enjoy!
You can enjoy the sorbet right away, but it will be a little softer. For a firmer sorbet, freeze until frozen solid. When ready to enjoy, take out of freezer 15 to 20 minutes before scooping.
Can Sorbet be Kept Frozen?
You betcha! The sorbet can be consumed immediately after blending however it’s even creamier and keeps well frozen. If freezing, choose a freezer safe container and transfer sorbet into container.
When ready to eat your sweet treat, take out of freezer for about 20 minutes before you’re ready for it to allow it to soften enough to scoop.
And just like that you have your treat. No ice cream maker required sorbet!
