Quinoa breakfast bake is so delicious you won’t believe how healthy it is!
Quinoa is baked with fruits and simple whole ingredients just until firm for an easy, yummy breakfast. With only one bowl and less than 5 minutes of prep, have a breakfast you can feel good about on the table in no time.

A Healthy Breakfast
I have never loved eggs for breakfast, so I have always been looking for alternative healthy options. When I found this quinoa breakfast bake, I fell in love. I love quinoa and I love the way this dish uses it.
- Skip the bowl and save the extra dishes, this breakfast bake is made right in the baking pan.
- A healthy, protein forward breakfast.
- Make this baked quinoa breakfast in advance and have healthy breakfasts all week long.
- Customize to your liking: make it sweeter or less sweet, use your favorite fruit.
Ingredients
- banana: the bananas give a lot of natural sweetness to this recipe, so be sure to select very ripe bananas with a few brown spots for the best flavor.
- milk: any milk will work just fine in this recipe. Use non-dairy milk to make this recipe vegan.
- quinoa: use uncooked, rinsed quinoa.
- maple syrup: add as much or as little to this recipe to your preference.
- chia seeds
- vanilla extract
- cinnamon
- salt: boosts the flavor
- berries: use any berries in this recipe, fresh or frozen. I often use a combo of blueberries and raspberries, but use whatever fruit you have on hand!
Variations: Switch the berries for diced apples for an apple cinnamon quinoa bake. Add a handful of chocolate chips for an extra treat.
You will also need an 8 x 8-inch baking pan.
How to Make Quinoa Breakfast Bake
- Mix all ingredients in an 8 x 8-inch baking pan.
- Bake until set.
That’s it! This quinoa berry breakfast bake really is such an easy breakfast. It can be enjoyed cold, but I prefer it hot with a little extra maple syrup over top.
TIP: The mixture will seem really liquidy before being baked. That’s okay! The quinoa will soak it all up and it was set once baked.

Quinoa Breakfast Bake
Equipment
- 8×8 baking pan
Ingredients
- 2 medium bananas
- 2 cups milk
- 1 cup uncooked quinoa
- ¼ cup maple syrup
- 2 tablespoons chia seeds
- 2 teaspoons vanilla extract
- ½ teaspoon cinnamon
- ½ teaspoon salt
- 1 cup berries fresh or frozen
Instructions
- Preheat oven to 350°F.
- In an 8 x 8-inch baking pan, mash the bananas. Add the remaining ingredients, except berries, and mix until combined.
- Gently mix the berries in.
- Bake for 60 to 70 minutes or until golden brown and the center is cooked through.
