Ingredients
2mediumbananas
2cupsmilk
1cupuncooked quinoa
¼cupmaple syrup
2tablespoonschia seeds
2teaspoonsvanilla extract
½teaspooncinnamon
½teaspoonsalt
1cupberriesfresh or frozen
Instructions
Preheat oven to 350°F.
In an 8 x 8-inch baking pan, mash the bananas. Add the remaining ingredients, except berries, and mix until combined.
Gently mix the berries in.
Bake for 60 to 70 minutes or until golden brown and the center is cooked through.
Notes
The mixture will seem really liquidy before baked. But it will come together to form breakfast bars once baked. This can be eaten cold, but I think it best served warm with a little extra maple syrup drizzled over top.
