This pesto grilled cheese is easy to put together with big flavor!
Crusty bread gets nice and crisp and is filled with melty mozzarella and flavorful pesto. Whether making as a quick lunch for yourself, or an elevated bite for a guest, this grilled cheese is sure to be a hit!

In a pinch, a good grilled cheese is always a go-to of mine. And while I love a classic, there are so many fun variations and this one is one of my favorites!

Ingredients
- Bread: I like to use sourdough or any crusty bread. In a pinch you can use whatever you have on hand.
- Pesto: Any pesto will work! I like a fresh pesto, like carrot top pesto, for the best flavor. Did you know that pesto freezes beautifully? Freeze it in an ice cube tray and pop out one or two cubes anytime you want to make one of these sandwiches.
- Mozzarella Cheese: A soft mozzarella pairs well with the pesto and makes for a delicious, melty grilled cheese. You can use low-moisture mozzarella if you prefer.
- Butter: Used to crisp the outside of the grilled cheese.
Variation: I find this sandwich plenty flavorful as is, but you can add fresh tomatoes or sun-dried tomatoes to change it up! Avocado or spinach are also delish add-ins.
You will also need a skillet.
How to Make a Pesto Grilled Cheese
- Butter the outside of the bread.
- Spread the pesto on the inside of the bread and layer with cheese.
- Cook in skillet until crispy golden brown on both sides.
Enjoy immediately for melty, cheesy goodness.

Ingredients
- 2 slices sourdough bread
- 2 tablespoons pesto
- 1 ounce soft mozzarella cheese sliced
- 1 tablespoon butter
Instructions
- Spread ½ tablespoon of butter on one side of bread and place it facedown in a skillet.
- Spread a tablespoon pesto on the top side of the bread evenly to the edges.
- Place the cheese slices on top of the pesto.
- Spread the remaining pesto on one side of the remaining piece of bread. Place on top of the cheese, pesto side down, to form a sandwich. Spread remaining ½ tablespoon butter on top of the sandwich.
- Heat a skillet over medium heat.
- Cook for 2-3 minutes, or until the bottom is golden brown and crispy.
- Using a spatula, carefully flip the sandwich to the other side and cook for an additional 2-3 minutes, or until the cheese is melted and the bread is golden brown and crispy.
