2slicessourdough bread
2tablespoonspesto
1ouncesoft mozzarella cheesesliced
1tablespoonbutter
Instructions
Spread ½ tablespoon of butter on one side of bread and place it facedown in a skillet.
Spread a tablespoon pesto on the top side of the bread evenly to the edges.
Place the cheese slices on top of the pesto.
Spread the remaining pesto on one side of the remaining piece of bread. Place on top of the cheese, pesto side down, to form a sandwich. Spread remaining ½ tablespoon butter on top of the sandwich.
Heat a skillet over medium heat.
Cook for 2-3 minutes, or until the bottom is golden brown and crispy.
Using a spatula, carefully flip the sandwich to the other side and cook for an additional 2-3 minutes, or until the cheese is melted and the bread is golden brown and crispy.
