PB & Homemade Chia Seed J toast is an easy breakfast that will wow all your tastebuds while still being healthy!
My favorite meal of the day is brunch. So much so I have a sweater from Brunette the Label that says “Babes Who Brunch” and I get invited to brunch from people just so I can wear my sweater and enjoy my favorite meal LOL.
Whenever I go out I always seem to be drawn to more brunch like items like matcha pancakes or a hash. So recently it was no surprise when I went out to a casual fast plant based diner and was drawn to a PB and J toast. It was SO delicious I knew I needed to try to recreate my own.
I was thrilled with the way it turned out! This PB and Homemade J toast is the perfect balance of creamy, sweet, nutritious, with a little crunch from the cocoa nibs.
This take on a peanut butter and jam toast elevates even the simplest of breakfasts.
- Peanut butter adds a creamy component full of protein

How to Make Homemade Chia Seed Jam
Raspberry chia seed jam is very simple to make and so healthy!
Start by adding the raspberries to the small saucepan. Heat on medium-low heat stirring frequently for approximately 5 minutes. While stirring you want to be breaking up the raspberries.
Remove from heat and stir in lemon juice, sweetener, and chia seeds.
Allow to cool and thicken for 1 hour.

Ingredients
Chia Seed Jam
- 1 cup raspberries
- 1 tablespoon lemon juice
- 1 tablespoon agave
- 1 tablespoon chia seeds
PB & Homemade Chia Seed J Toast
- 2 pieces toast
- peanut butter
- 1 banana sliced
- cocoa nibs
Instructions
Chia Seed Jam
- Add raspberries to sauce pan on stovetop. Heat on medium-low heat stirring frequently for five minutes. While stirring and heating raspberries, break up raspberries.
- Remove from heat and add lemon juice, sweetener, and chia seeds.
- Allow chia seed jam to sit for 1 hour to thicken.
PB & Homemade Chia Seed J
- Toast desired bread.
- Layer on peanut butter, followed by chia seed jam, and then top with sliced bananas
- Sprinkle cocoa nibs on top
