- Cheese: Use sharp or extra-sharp cheddar for the best flavor. Mild cheddar works but will be more subtle. Pre-shredded cheese has anti-caking agents that may affect texture slightly; freshly shredded from a block is best.

- Salt
- Butter: Use cold butter for the best results. If you only have salted butter, reduce or skip the added salt in the recipe.
You will also need a food processor (a small one works just fine!). If you want to make fun shapes, I recommend using a vegetable shape cutter or mini cookie cutters.

- Make the Dough: In a food processor combine the cheese, flour, cornstarch, and salt. Add the cold butter and mix until it comes together. If the dough feels too dry, add 1 teaspoon of cold water at a time just until it holds together when pressed. Be sure to give it a few minutes of pulsing before adding water.
- Chill the Dough: Shape the dough into a flat disk, wrap it in plastic wrap, and refrigerate for 30–60 minutes. This step helps prevent spreading and ensures a crisp texture.
- Roll and Cut: Preheat your oven to 350°F. On a lightly floured surface, roll the dough to about ⅛-inch thickness. Cut into 1-inch squares using a sharp knife or pizza cutter. Poke a small hole in the center of each cracker with a toothpick or skewer to mimic the classic Cheez-It look.
- Bake! Place the crackers on a parchment-lined baking sheet, spaced slightly apart. For a crispier bite, let them go an extra minute.
- Cool and Store: Remove from the oven and cool completely. I store them in a container on the counter with the lid just open to keep them crisp.

- ½ cup all-purpose flour
- ¾ teaspoon cornstarch
- ⅛ teaspoon salt
- 3 tablespoons unsalted butter cold
Instructions
- In a food processor or bowl, combine shredded cheese, flour, cornstarch, and salt. Add cold butter and process until a dough comes together.
- Shape the dough into a small disk, wrap in plastic wrap, and chill in the fridge for 30–60 minutes.
- Preheat oven to 350℉. Line a baking sheet with parchment paper.
- On a lightly floured surface, roll the dough to about ⅛-inch thick. Cut into small 1-inch squares with a knife or pizza cutter.
- Place crackers on a parchment-lined baking sheet, spaced just slightly apart.
- Bake for 16-18 minutes. Remove when edges are just starting to crisp.
