3ouncescheddar cheese1 cup lightly packed
½cupall-purpose flour
¾teaspooncornstarch
⅛teaspoonsalt
3tablespoonsunsalted buttercold
Instructions
In a food processor or bowl, combine shredded cheese, flour, cornstarch, and salt. Add cold butter and process until a dough comes together.
Shape the dough into a small disk, wrap in plastic wrap, and chill in the fridge for 30–60 minutes.
Preheat oven to 350℉. Line a baking sheet with parchment paper.
On a lightly floured surface, roll the dough to about ⅛-inch thick. Cut into small 1-inch squares with a knife or pizza cutter.
Place crackers on a parchment-lined baking sheet, spaced just slightly apart.
Bake for 16-18 minutes. Remove when edges are just starting to crisp.
Allow to cool completely on baking sheet.
Notes
If dough is too crumbly, add water 1 teaspoon at a time to food processor until dough comes together.For fun shaped crackers, use small kid vegetable crackers. The amount of crackers and nutrition value will depend on the size of cutter you use.
