Easy Orzo Pasta Salad
I have always had a love for simple dishes I can prep for lunches or make in advance. Life gets busy and meal time always seems to be the busiest. The first time I had orzo in a pasta salad I fell in love and now I love to use orzo to prep pasta salads all the time!

“Pasta-roni” is a favorite food of my sons and this orzo pasta salad (or my caprese pasta salad) gets him eating more veggies with his pasta!
What is Orzo?
Orzo is an often forgotten pasta which is so good in a pasta salad style dish.
It is a type of pasta that resembles rice. It is small, flat, oval-shaped noodle and it cooks fairly quickly.
Ingredients for Greek Orzo Salad
- orzo: you can substitute your favorite pasta in this dish.
- cucumber: fresh, healthy, and delish, it adds a nice bite and crunch to this dish.
- cherry tomatoes: can also use grape tomatoes or diced regular tomatoes.
- red onion
- feta cheese: adds a salty note to this salad
- olives: optional
- dressing: use your favorite Greek salad dressing! In a pinch store bought will work perfectly. To make your own I use this recipe.
You will also need a saucepan to make the orzo and mixing bowls to toss it all together.
How to Make Greek Orzo Pasta Salad
This is such a quick and easy pasta salad to throw together, it will quickly become a favorite.
- Cook the orzo pasta then chill.
- Prepare the veggies and dressing.
- Mix everything all together.
Orzo Salad Recipe Tips
Leftovers? Store in an airtight container for 4 days in the refrigerator.
Easily customize this to your preference by adding in your favorite crunchy veggies like green bell peppers or spinach.
Add your favorite protein (chickpeas are a great choice!) to make this a heartier pasta salad.
Greek Orzo Pasta Salad
Equipment
- saucepan
- mixing bowls
Ingredients
- 1 ½ cup orzo uncooked
- 1 cucumber diced
- 1 pint cherry tomatoes halved
- ¼ cup red onion diced
- ⅓ cup feta crumbled
- ¼ cup olives optional
- ½ cup Greek dressing
Instructions
- Cook orzo el dente as per pacakge instructions
- When orzo is done cooking, drain and rinse with cool water. Drizzle with olive oil.
- Toss all ingredients together.
- Refrigerate for 2 hours before serving.
