Easy Cucumber Salad
With an abundance of garden dill I have been looking for ways to use it. Of course dill pickle dip is my favorite, but it also goes so well in salads! This cucumber dill salad has quickly become my go to.
- Only requires cucumbers and simple dressing ingredients
- Takes less than 10 minutes to make
- Refreshing on a hot summer day and compliments any main course dish!
Ingredients
- Cucumbers: use your favorite cucumbers in this salad. My go to are English cucumbers because they are easily found at the grocery store and have a thin skin that doesn’t need to be peeled. But any garden variety will work.
- Dill: fresh dill adds so much flavor.
- White Onion: red onion will also work.
- Vinegar: white vinegar is a neutral vinegar that adds just the right amount of tang to this salad. Try swapping it for balsamic vinegar, apple cider vinegar, or red wine vinegar.
- Sugar: used to balance out the vinegar.
- Kosher Salt and Pepper
Variations: Turn this into a creamy cucumber salad by adding sour cream (or Greek yogurt) and mayo.
I like to use a mandoline to slice the cucumbers even quicker.
How to Make Cucumber Dill Salad
I turn to this salad anytime I need a healthy side dish because it is so easy!
- Slice the cucumbers.
- Toss everything together.
- Refrigerate.

Recipe Tips
Allow the salad to refrigerate for 30 minutes for the flavor to develop. Once it is chilled, it also makes this salad extra refreshing
You can keep this salad but the cucumbers will begin to wilt/pickle over time.

Equipment
- mandoline
Ingredients
- 1 English cucumber
- ¼ white onion thinly sliced
- 3 tablespoons white vinegar
- 2 tablespoons fresh dill finely chopped
- 1 teaspoon sugar
- ¼ teaspoon kosher salt
- pepper to taste
Instructions
- Thinly slice the cucumber.
- Add all ingredients to a large bowl and mix until fully combined.
- Allow to refrigerate for at least 30 minutes.
