Easy Baked Brie Bites Recipe
These cranberry brie bites with phyllo dough are my go-to holiday appetizer.

- Customize to your liking, chopped nuts, such as walnuts or pecans, add a nice crunch.
Ingredients
- phyllo dough sheets: Phyllo dough is used to create the crispy, flaky pastry layers that encase the brie and cranberry. It’s important to keep it covered with a damp kitchen towel to prevent it from drying out while you work with it. Swap out the phyllo with puff pastry or crescent roll dough if desired.
- butter: either salted or unsalted will work.
- brie: Remove the rind from the brie cheese, as the rind can be a bit tough
- cranberry sauce: You can use store-bought cranberry sauce or make your own.
You will also need a mini muffin pan.
To make these look festive, add fresh rosemary to the top of the cranberry sauce for a red and green delight.

This brie appetizer is so easy to put together.
- Prep the phyllo dough.
- Add phyllo dough and brie to mini muffin tin.
- Bake until melty and phyllo is golden brown.
- Spoon cranberry sauce on top and serve while hot.

Ingredients
- 4-5 sheets phyllo dough sheets
- 2 tablespoons butter melted
- 8 oz brie cheese 1 wheel, rind removed and cut into 24 small cubes
- ½ cup cranberry sauce
Instructions
- Preheat your oven to 375°F.
- Lay one sheet of phyllo dough on a clean surface or cutting board and brush it lightly with melted butter. Place another sheet of phyllo dough on top and brush it with melted butter as well. Repeat this process until you have stacked 4-5 sheets of phyllo dough.
- Cut the stacked phyllo sheets into 24 squares, approximately 1½ x 1½-inch each.
- Put each square of phyllo into a mini muffin well and gently press into the shape of the muffin well.
- Place a small cube of brie cheese in the center of each phyllo square.
- Place the baking sheet in the preheated oven and bake for 5-6 minutes or until the phyllo is golden and brie is melty.
- Top the brie with a teaspoon of cranberry sauce.
Notes
Remove the phyllo dough from the package and keep it covered with a damp kitchen towel to prevent it from drying out while you work. Phyllo dough dries out quickly, so it’s essential to keep it moist.
