Overnight Oats with Coconut Milk
I am not a morning person so I need to find ways to keep my morning routine short! When I’m running around in the morning pulling myself together, spending a quick moment playing with the pups, the last thing I feel like I have time for is to pull together a healthy breakfast. To solve this I meal prep for breakfast so I don’t have to worry about it!
Whether it’s banana bread overnight oats, apple pie overnight oats, pumpkin pie overnight oats, or these coconut milk overnight oats, they are always so easy and my go to!

Overnight oats is an easy meal to make variations on to always keep it interesting!
- oats: I use rolled oats and do not recommend using quick oats, they can get a little mushy. You can use steel-cut oats but they will not soak up the milk in the same way rolled oats will leaving them a little chewier.
- coconut milk: I love the subtle flavor coconut milk adds to this dish and I found it made the overnight oats so light. You can use almond milk, cashew milk, oat milk, or any other milk. You can also add yogurt (Greek yogurt is a great way to add some protein!).
- fruit: I tend to use frozen fruit for ease however there options here are endless. You can use frozen fruit, fresh fruit, blueberries, stone fruit, anything your heart desires!
You will also need mason jars (or any other jars) to prepare this overnight oats recipe with coconut milk.
How to Make Coconut Milk Overnight Oats
- Mix everything, except fruit in a large bowl.
- Add ½ cup of oat mixture to jars.
- Top with fruit and remaining oat mixture.
- Set overnight.
The oat mixture will seem quite runny but will thicken overnight from the chia seeds and oats.
Can I Warm Up Overnight Oats?
Absolutely you can, however I think this dish is best served cold!

Coconut Milk Overnight Oats
Equipment
- mason jars
Ingredients
- 2 cups oats not quick cooking variety
- 2 ½ cups coconut milk
- 2 tablespoons maple syrup or sweetener of choice, optional
- 2 tablespoons chia seeds
- 2 cups frozen fruit
Instructions
- In a large bowl mix together the oats, coconut milk, maple syrup, and chia seeds. Mixture will be quite runny.
- Fill mason jars with ½ cup of the oat mixture.
- Add ½ cup frozen fruit to each mason jar.
- Top up with remaining oat mixture.
- Let sit for a minimum of 6 hours before enjoying.

I have not tried making overnight oats without chia seeds. I think it will not thicken up the same, but will still be delicious! If you try it, I would love to hear how it turns out!
