Cauliflower nachos have all the flavor and goodness of nachos in a much healthier way.
Cauliflower florets are roasted with taco seasoning and topped with melty cheese and all your favorite nacho toppings. Serve with salsa and feel good about getting your veggies in!

Roasted Cauliflower Nachos
I saw broccoli nachos on Instagram and was immediately hooked. After making them on repeat I decided to try with cauliflower and they are just as good! One try and you’ll be convinced to skip the chips too!

Ingredients
- cauliflower: Choose a fresh, firm cauliflower head. Ensure it’s free from any blemishes or soft spots. Washing and thoroughly drying the cauliflower is crucial to prevent the cauliflower from steaming instead of getting crispy.
- olive oil
- taco seasoning: Use store-bought taco seasoning or make your own blend using a combination of spices such as chili powder, cumin, black pepper, garlic powder, onion powder, oregano, and a pinch of salt.
- sour cream: Opt for full-fat sour cream for a creamier texture and richer flavor. If you prefer a lighter option, you can use Greek yogurt as a substitute.
- lime juice
- cheddar cheese: Freshly grated cheddar cheese is optimal for both melting and flavor. You can also experiment with other types of cheese like Monterey Jack or Pepper Jack.
You will also need a baking sheet.
Cauliflower Nacho Toppings
Sky is the limit when topping your nachos!
- Fresh or pickled jalapenos
- Tomatoes
- Bell peppers
- Black beans or refried beans
- Sliced olives
- Diced onions
- Green onions
- Corn
- Cilantro
- Avocado
How to Make Cauliflower Nachos
- Roast cauliflower with taco seasoning.
- Add cheese and bake for a few more minutes.
- Drizzle with lime crema and desired nacho toppings.
Have leftovers? While they become kind of messy, I have reheated leftovers in the air fryer for a few minutes. And while it doesn’t exactly resemble nachos, it’s still delicious!

Cauliflower Nachos
Equipment
- baking sheet
Ingredients
- 1 head cauliflower
- 2 tablespoons olive oil
- 1 packet taco seasoning approximately 2 tablespoons
- ¼ cup sour cream
- ½ tablespoon lime juice
- 1½ cups shredded cheddar cheese
- nacho toppings
Instructions
- Preheat oven to 425℉. Line a baking sheet with parchment paper.
- Wash and dry cauliflower thoroughly. Chop into florets.
- Toss florets with olive oil and taco seasoning. Spread into an even layer on prepared baking sheet.
- Bake for 20 minutes.
- In the meantime, in a small bowl mix sour cream and lime juice together. Prepare desired taco toppings.
- After 20 minutes push cauliflower all together on baking sheet. Sprinkle cheese over top of cauliflower and bake for 4 to 5 minutes or until cheese is melted.
- Add desired nacho toppings and drizzle lime crema over top.
