The Best Arugula Pizza Recipe
I was once at a pizza place that was similar to Subway where you could choose off the menu and they would add the ingredients from the bar in front of you and you could customize to your liking. I had a pizza that was loaded with fresh arugula on top and it has become my go to ever since!
Is arugula good on pizza? It adds a fresh component to pizza and a peppery flavor. I think pizza with arugula is SO good and can’t wait for you to try it too!

Ingredients
- pizza dough: use your favorite pizza dough. I like to use fresh dough if I can find it. My second choice is frozen “fresh dough”. In a pinch, a premade crust, flatbread, or a roll of refrigerated pizza dough will work.
- pizza sauce: any pizza sauce will work. Spice it up and add chili flakes or your favorite hot sauce to the pizza sauce.
- mozzarella cheese: Any mozzarella will work, but a fresh soft mozzarella will take your pizza to the next level.
- arugula: Do you put arugula on pizza before or after cooking? It is totally up to you! It will wilt quickly and I like the fresh bite so I always add arugula on pizza after.
- cherry tomatoes: Slice tomatoes in half to make them an easier bite. Grape tomatoes or diced tomato will work as well.
- balsamic glaze: A drizzle of balsamic glaze is the perfect finishing touch!
Variations: Add your favorite pizza toppings like mushrooms, candied jalapenos, caramelized onions, or a dollop of pesto. Or stay with the fancy pizza theme and add pear and fig. Try using different cheeses like ricotta, burrata, goat cheese, or gorgonzola.
I bake my pizza on a baking pan to save the mess it can make in the oven, but if you’re baking it directly on the rack you can place a baking pan under it to catch any drips. You will also need a pizza wheel to cut the pizza.
How to Make Arugula Pizza
- Add cheese and tomato sauce to your pizza crust and bake as directed.
- After baking top with fresh arugula and cherry tomatoes.
- Drizzle with balsamic glaze.
Cut the pizza with arugula and enjoy!
Tips
- For a shortcut, use a premade cheese pizza as your base. Once you top it, no one will ever know it wasn’t homemade!
- To save leftovers you can leave it as is and warm up with the arugula and tomatoes on top. They will become wilty but will still be delicious. Alternatively, remove the arugula and cherry tomatos and save on the side to top after the pizza is reheated.

Arugula Pizza
Equipment
- pizza wheel
Ingredients
- 1 roll refrigerated pizza dough or prebaked pizza crust
- ¾ cup pizza sauce
- 8 ounces mozzarella
- 1 cup cherry tomatoes cut in half
- 2 cups arugula
- balsamic glaze drizzle
Instructions
- Preheat oven to 425 F.
- Roll out pizza dough into 12" circle. Top with pizza sauce and mozzarella.
- Bake for 11 to 14 minutes or until cheese is bubbly and golden.
- Remove from oven and top with cherry tomatoes, arugula, and a drizzle of balsamic glaze.
- Cool for a 2-3 minutes and cut into 8 slices.
