These Mason Jar Healthy Burrito Bowls are the perfect healthy option for lunch.
I find the more I meal prep, the healthier I eat throughout the week. It also has to be yummy food that I look forward to! For lunches I like to eat something healthy and fresh that will give me a boost of energy throughout the day!
Lately I have been on a huge mason jar kick. I’m trying to plan all of my meal prep in mason jars. I started with a green smoothie, which has become a morning staple for me. And now I want to meal prep my lunch in a mason jar too! I was looking for something more than just a salad in a mason jar, which I have done before. And I always love to make quinoa based lunches with tons of vegetables. So with those things together I dreamed up this lovely lunch of a quinoa burrito bowl meal prep!
This mason jar vegan burrito bowl is full of flavor, fresh ingredients, contains tons of nutritional value including protein, and the burrito bowl recipe is SO easy to whip up! I think this is going to become a staple for me!
What is in a Burrito Bowl?
I start these mason jars with basic ingredients common in Mexican dishes.
- Black Beans
- Tomatos
- Corn
- Red Bell Pepper
- Spices
From there you can add many other ingredients such as…
- Lettuce (see my note below)
- Avocado
- Cilantro
- Vegan Shredded Cheese
- Vegan Sour Cream
- Salsa
- Pickled Jalapenos
Note I did not add lettuce as one of my key ingredients. The reason for this is I don’t find lettuce holds very well meal prepped for a week in a mason jar with other moist ingredients. If you wanted to make this meal bigger, or make this as a dinner you can add as much lettuce as you would like and it would not impact the delicious flavors.
How to make a Burrito Bowl
Making a mason jar burrito is very simple. You start by cooking your quinoa.
While your quinoa is cooking, you wash and dice your vegetables. I dice my vegetables small for this dish. In each bite you want to get a bit of each ingredient.
After you have all your ingredients prepped you can then make your mason jars!
To make it even simpler you could mix all the ingredients in a bowl and then just evenly portion out your mixture. I like to eat pretty food (I know, I know, it doesn’t make it taste better) so I layer my ingredients.

Mason Jar Burrito Bowl
Equipment
- mason jars
Ingredients
- 1 cup Quinoa, Uncooked
- 1 cup Tomato You can use regular tomatos or cherry tomato
- 1 Red Bell Pepper
- 2 cups Black Bean I used 1 540 mL can
- 1 ½ cup Corn I used 1 341 mL can
- 2 tablespoons Lime Juice
- 1 teaspoon Chili Powder
- ⅛ teaspoon Cayenne
- Salt and Pepper To Taste
Optional Toppings
- Lettuce
- Avocado
- Cilantro
- Salsa
- Vegan Sour Cream
- Vegan Shredded Cheese
- Pickled Jalapenos
Instructions
- Cook quinoa as per instructions.
- In the meantime wash tomato and bell pepper. Dice tomato and bell pepper.
- Rinse black beans.
- After quinoa is done cooking, add lime juice, chili powder, cayenne, salt, and pepper.
- First add 1/2 cup of quinoa to the mason jar. Next layer the black beans. Then add the corn, bell pepper, and then tomatos.
- Finish off by adding whatever toppings you desire!
