Quinoa, Uncooked

Tomato
You can use regular tomatos or cherry tomato

Red Bell Pepper

Black Bean
I used 1 540 mL can

Corn
I used 1 341 mL can

Lime Juice

teaspoon
Chili Powder

teaspoon
Cayenne
Salt and Pepper
To Taste
Optional Toppings
Lettuce
Avocado
Cilantro
Salsa
Vegan Sour Cream
Vegan Shredded Cheese
Pickled Jalapenos
Instructions
Cook quinoa as per instructions.
In the meantime wash tomato and bell pepper. Dice tomato and bell pepper.
Rinse black beans.
After quinoa is done cooking, add lime juice, chili powder, cayenne, salt, and pepper.
First add 1/2 cup of quinoa to the mason jar. Next layer the black beans. Then add the corn, bell pepper, and then tomatos.
Finish off by adding whatever toppings you desire!
