Banana Bread Overnight Oats
I love overnight oats as an easy and healthy breakfast option. They are quick to make and very filling with fiber filled carbohydrates which are perfect for busy days. During fall I am looking for recipes that are full of warm flavors and these banana bread recipe inspired oats fit the bill.

Ingredients
- oats: use old-fashioned rolled oats for the best texture, instant oats tend to get mushy. Avoid steel-cut oats as they won’t soften adequately during the soaking process.
- milk: any milk can be used in this recipe.
- yogurt: use any yogurt you have on hand. My go-to is plain Greek yogurt as this is most often what I have on hand, but vanilla yogurt would be another great choice.
- bananas: choose ripe bananas for the best flavor and sweetness. Overripe bananas with brown spots work exceptionally well as they add natural sweetness and a hint of banana bread flavor.
- chia seeds: the chia seeds act as a thickening agent and provide added fiber and nutrients such as Omega-3 fatty acids.
- maple syrup: maple syrup adds sweetness to the oats. Adjust the amount to your taste preferences. You can also substitute honey, agave nectar, or another sweetener of your choice.
- vanilla
- cinnamon
- salt: makes the flavors pop!
- pecans: pecans contribute a delightful crunch and nutty flavor. You can substitute them with other nuts like walnuts or almonds, or omit them altogether if you have nut allergies or preferences.
Variations: To make this recipe vegan, use non-dairy milk and non-dairy yogurt. Add in a swirl of your favorite nut butter for an extra protein boost like peanut butter or almond butter. Sprinkle on chocolate chips on top with the pecans for an extra treat.
You will also need a mixing bowl and mason jars (to store them in).
How to Make Banana Bread Overnight Oats
- Combine all ingredients (except pecans).
- Refrigerate overnight.
- Top with pecans right before serving and enjoy!
Overnight oats are good for up to 5 days in the refrigerator.
Do You Eat Overnight Oats Cold?
I do eat overnight oats cold in a truly grab-and-go fashion. But if you prefer you can absolutely warm them up!

Equipment
- mason jars
Ingredients
- 2 bananas mashed
- 1 cup large flake oats
- 1 cup milk any type of milk
- ½ cup yogurt
- 2 tablespoons chia seeds
- 1-2 tablespoons maple syrup to taste
- 1 teaspoon vanilla
- ½ teaspoon cinnamon
- pinch sea salt
- ¼ cup chopped pecans
Instructions
- In a large bowl, mix bananas, oats, milk, yogurt, chia seeds, maple syrup, vanilla, and cinnamon.
- Divide oat mixture between 4 mason jars.
- Allow to sit at least 4 hours, or ideally overnight.
- Top with pecans right before serving and enjoy!
