Yummy Pancakes with Peaches
One summer many moons ago my husband and I were camping in the Okanagan. It was peach season and we had grabbed peaches from a local fruit stand. In the morning he made pancakes but instead of blueberry pancakes, which are my favorite, he added chunks of fresh peaches. Ever since we look forward to peach pancakes with local peaches every summer.
This recipe is the elevated version of what started at pancake mix with chunks of diced peaches (although that’s delicious too!).

Ingredients
- flour: this recipe uses all-purpose flour for just the right consistency. Swap in half whole wheat flour if desired.
- sugar
- baking soda
- salt
- egg
- milk
- plain yogurt: I use plain Greek yogurt because that is what I have on hand most often. Any yogurt will work just fine. Try peach yogurt for extra peachy pancakes!
- melted butter
- lemon juice: in addition to the baking soda, this creates perfectly fluffy pancakes.
- vanilla extract
- peach: be sure to choose fresh, ripe peaches for the best flavor. I like to thinly slice the peaches and add them to the batter once it’s in the pan. Having them on top once it flips they end up getting caramelized and has a beautiful presentation. You could also dice them up and sprinkle them on top. In a pinch frozen peaches can be used, thaw and drain first. You could also make them with canned peaches.
Serve with a pat of butter and drizzle with real maple syrup.
Variation: Add ground cinnamon or ground ginger for extra flavor. Top with peach topping sauce for extra peachy pancakes.
You will also need mixing bowls and a non-stick pan or griddle.
How to Make Peach Pancakes
- Mix together dry ingredients and wet ingredients separately.
- Add wet ingredients to dry ingredients and mix until just combined.
- Pour pancake batter into non-stick pan. Add thinly sliced peaches to batter.
- Cook until golden brown on both sides.
Tips for Perfect Pancakes
Mix ingredients until just combined. Overmixing pancake batter can cause dense pancakes.
Add the peaches to the pancake batter right after you add it to the pan so they bake in.
After cooking the first batch of pancakes, put on a plate and cover with tinfoil or place on a baking sheet in the oven at 200°F to keep warm until they are all already.
Put leftover peach pancakes in an airtight container and store in the fridge for 2-3 days.
To reheat leftovers, wrap pancakes in a damp paper towel and microwave for about 20-30 seconds.

Peach Pancakes
Equipment

Ingredients
- 1 cup all-purpose flour
- 1 tablespoon sugar
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 egg
- ⅔ cup milk
- ½ cup plain yogurt
- 2 tablespoons melted butter
- 1 tablespoon lemon juice
- 2 teaspoons vanilla extract
- 1 peach halved, pitted and very thinly sliced
Instructions
- In a medium bowl, whisk together the flour, sugar, baking soda, and salt.
- In a small bowl, whisk the egg. Stir in the milk, yogurt, melted butter, lemon juice, and vanilla extract.
- Add the wet ingredients to the dry and mix until just combined.
- Heat a non-stick pan over medium heat.
- Pour ¼ cup onto the preheated pan for each pancake. Place 2 to 3 peach slices on top of each pancake. Cook the pancake until it begins to bubble and lightly brown on the bottom, about 3-4 minutes.
- Flip the pancake and cook for another 2-3 minutes, or until golden brown and cooked through.
