Spaghetti noodles and your favorite vegetables are tossed in a peanut sauce in a dinner that comes together in less than 30 minutes. Make your weeknight dinner a breeze with this flavorful dinner.

A Quick and Easy Dinner
Evenings often feel a little crazy in our house. I walk in the door with my toddler, all blustery and full of big feelings from his day at daycare. It’s 5 o clock and I want to make a healthy and delicious dinner that even he will eat. I need something easy that doesn’t take too much prep so I can have one hand in the kitchen and one hand helping my little one. This dinner checks all of those boxes!

- Can easily customize to your family’s liking.
Ingredients
- Spaghetti: spaghetti is my go-to for this recipe but any pasta can be used. Udon or Chow Mein noodles would be a fun substitute! Or to make this gluten-free serve the vegetables and sauce in a bowl over rice (and check your ingredients for gluten like the soy sauce!).
- Sesame Oil: any oil can be used, but sesame oil adds a nice flavor to the dish.
- Ginger
- Garlic
- Vegetables: I like to choose a variety of colorful vegetables to get a variety of nutrients. Carrots and broccoli are my go-to for this recipe. Colorful bell peppers, bean sprouts, and zucchini all go well in this dish.
- Garnishes: green onions, peanuts, and cilantro are all used to all texture and flavor to this dish.
- Sauce: quickly whip up this flavorful sauce which has vegetable broth, soy sauce, creamy peanut butter, brown sugar, lime juice, sesame oil, and sriracha. The sriracha can be left out if you don’t like it spicy but even my toddler doesn’t mind the little bit of heat in this recipe.
Looking for a little more protein? Tofu or chickpeas would go great in this dish!
You will also need a saucepan to cook the noodles and a large skillet for the rest. If using carrots, I like to have them shredded in this recipe so I often use a mandoline to make it quick!
How to Make Peanut Noodles
- Prepare the sauce, cut the veggies, and cook the noodles.
- Cook veggies in a large skillet.
- Add sauce and simmer until thickened. Add noodles and stir until fully coated.
Serve with your favorite garnishes and enjoy!
Tips
This makes excellent leftovers. Double the recipe to enjoy all week.
I serve it hot for dinner, but it is just as yummy as a cold noodle salad! Prepare the sauce the same way and cook it down in the frying pan with the garlic and ginger but skip cooking the vegetables. Toss the cooked noodles, raw vegetables, and sauce together and refrigerate for one hour.

Peanut Noodles
Equipment
- saucepan
- skillet
Ingredients
- 8 ounces spaghetti
- 1 tablespoon sesame oil
- 1 tablespoon ginger grated
- 2 cloves garlic minced
- 2 carrots shredded
- 3 cups broccoli cut into bite size pieces
- crushed peanuts, green onions, and cilantro for garnish
Peanut Sauce
- ½ cup vegetable broth
- 2 tablespoons soy sauce
- 2 tablespoons creamy peanut butter
- 1 tablespoon brown sugar
- ½ tablespoon lime juice
- ½ tablespoon sesame oil
- 1 teaspoon sriracha or to taste
Instructions
- Cook spaghetti to al dente. Drain well, do not rinse.
- Meanwhile, mix together all sauce. ingredients in a small bowl.
- Heat sesame oil in skillet over medium heat. Add garlic and ginger and cook until fragrant, 2-3 minutes.
- Add carrots and broccoli and cook 2-3 minutes or until slightly tender. Add peanut sauce to pan and simmer until thickened, about 4-5 minutes.
- Add spaghetti noodles and stir until coated.
- Dish up noodles and garnish with crushed peanuts, green onions, and cilantro.
