Overnight no knead bread is a simple homemade bread recipe.
With just three pantry ingredients and only 15 minutes of prep time, you can make a delicious artisan loaf that is perfect for sandwiches, toast, or just eating on its own. With a crispy crust and soft, fluffy interior, this bread is sure to become a staple in your kitchen.

Easy No Knead Bread
I love carbs. Pasta, bread, potatoes, grains, you name it. I first heard of this no knead bread from a coworker and I went home and started my first batch that evening!

- This recipe can be flexible, tailor the time it takes to make this bread to your needs.
This bread works great as a dipper for chili or soup like pumpkin soup, to use as a base for avocado toast or ricotta toast, or to serve as beautiful fresh bread on its own.
Ingredients
- Flour: I use all purpose flour in this recipe but whole wheat flour can be used as well.
- Salt
- Yeast: I have only tried this recipe with instant yeast. If using other yeast such as active yeast, be sure to follow the instructions on the packet to activate.
To make this recipe you will also need a dutch oven.
Optional Add-In Variations
- Seeds: Add your favorite seeds in the flour mixture or on top of the dough.
- Fresh Herbs: Sprinkle fresh or dried herbs in the flour mixture or on top of the bread right before baking.
- Fresh Cracked Pepper/Sea Salt: Sprinkle on top
How to Make No Knead Bread
While this bread takes a long time to come together, the hands on prep time is very minimal!
- Mix all ingredients together.
- Allow bread dough to rise.
- Lightly flour surface and dough. Fold dough over on itself a few times and shape into ball.
- Allow dough to have second rise.
- Bake and enjoy!
Bread Tips and Tricks
The dough will be quite sticky, soft, and shaggy after mixing all ingredients together.
Allow dough to rise overnight in a warm place (approximately 70 F).
Trust the process. After the first few hours it may look like nothing is happening. But after 12 hours you will have fluffy bread dough!
The longer you let the bread rise, the lighter it will be.

Equipment
- dutch oven
Ingredients
- 3 cups flour plus a little extra for dusting
- 1 ½ teaspoon salt
- ½ teaspoon instant yeast
- 1 ½ cups warm water
Instructions
- In a large bowl mix together the flour, salt, and instant yeast.
- Add in the water. Stir until ingredients are well mixed. Dough will be shaggy.
- Cover bowl with plastic wrap. Leave bowl at room temperature for a minimum of 12 hours up to 24 hours.
- Sprinkle flour over a working surface and place dough on it. Lightly flour dough and fold dough over on itself a few times. Sprinkle dough with flour and gently shape into a ball.
- Cover dough with plastic wrap and allow to rise for minimum 1 hour.**
- Place dutch oven into the oven. Preheat oven to 450°F.
- When dough is ready, carefully remove dutch oven from oven. Drop dough into the dutch oven and cover and put back in the oven.
- Bake for 30 minutes with lid. Uncover and bake for 20-30 more minutes until golden brown.
