Ingredients
- Chickpeas: The base of the recipe, providing a creamy texture and a boost of protein and fiber.
- Oats
- Peanut Butter: Swap for almond butter or for a nut free option, try sunflower butter.
- Maple Syrup: Adjust to your desired sweetness level.
- Vanilla Extract
- Salt
- Chocolate Chips: Any chocolate chips will do! Semi-sweet is most common, but milk chocolate is my favorite! To keep this recipe vegan, use vegan chocolate chips.
Variations: switch up your add-ins. Chopped nuts, dried fruit like raisins or dried cranberries, or shredded coconut are all great options.
You will also need a food processor.
How to Make Chickpea Cookie Dough
- Add all ingredients, except chocolate chips, in a food processor. Blend until smooth.
- Stir in chocolate chips.
Ayla’s Pro Tip:
To make this cookie dough extra smooth, peel the chickpeas.
- Simply pinch each chickpea gently between your thumb and forefinger, and the skin should come off easily.
- OR to make it a little easier, lay down a paper towel. Add chickpeas in a single layer and top with another paper towel. Gently place your hand on the top paper towel and move in a circular motion. This should helps remove a lot of the skins quicker!
Store leftovers in an airtight container in the refrigerator for up to 5 days.

Ingredients
- 1 15 oz can chickpeas drained and rinsed, approximately 1½ cups
- ¼ cup oats
- ¼ cup creamy peanut butter
- ¼ cup maple syrup
- 2 teaspoons vanilla extract
- ¼ teaspoon salt
- ½ cup chocolate chips
Instructions
- In a food processor, combine the drained chickpeas, oats, peanut butter, maple syrup, vanilla extract, and salt. Blend until smooth. Scrape down the sides of the food processor and blend again to ensure everything is well mixed.
- Transfer the cookie dough to a bowl. Stir in the chocolate chips.
