A Quick and Easy Tomato Soup Recipe
We received our Vitamix from my father-in-law for our wedding and I was SO excited to use it. It quickly became one of my favorite things in our kitchen. Not only could it blend smoothies to perfection, but I was so impressed with the ability to make things from flour, to almond milk, to soups! When I discovered blender tomato soup I was hooked and this quickly became a part of our regular meal rotation. In fact, my brother thinks it’s my best meal. I always keep a can of diced tomatoes in our pantry so I can whip this up anytime!
- This soup is the perfect dinner to warm you up on chilly nights.
- Uses a handful of pantry ingredients that you likely already have on hand.
- Easy to customize the flavors to your liking.
- Have an easy vegetarian dinner on the table in less than 15 minutes!
Ingredients
- olive oil: swap for butter if preferred.
- onion: I love the flavor of a white onion, but a sweet onion or yellow onion would work well too.
- garlic
- diced tomatoes: you can also use canned whole tomatoes.
- sugar: the sugar balances out the sweetness of the tart tomatoes.
- paprika
- Italian Seasoning
- cayenne: add as much or as little to match your desired spice level.
- Worcestershire: adds a depth and umami to the soup. If you don’t have, it can be replaced with soy sauce.
- cream: turns this soup into a deliciously creamy soup. This can be replaced with cashew cream (and omit the Worcestershire) to keep this soup vegan.
- Salt & Pepper
You will also need a Vitamix or another blender (or immersion blender) to blend the soup.
How to Make Vitamix Tomato Soup
- Fry onion until softened and then add garlic and saute until fragrant.
- Add onion mixture and all other ingredients (except for cream) to Vitamix.
- Blend on soup setting until smooth and hot.
- Put blender on slow and drizzle in cream until fully mixed in.
Garnish with fresh basil or parmesan cheese if desired.
Blender Soup Tricks
To really speed this recipe up, swap the onion for onion powder and garlic for garlic powder and add everything directly to the Vitamix and blend! You’ll have dinner on the table in less than 10 minutes.
If you do not have a high-powered blender, place all the ingredients into a conventional blender. Blend until achieving a smooth consistency, then carefully transfer the mixture to a saucepan. Proceed to heat thoroughly.
