Ingredients
115 oz canblack beansdrained and rinsed very well, approximately 1 ½ cups
½cupoatssee notes
½cupmaple syrup
¼cupvegetable oil
2tablespoonscocoa powder
2teaspoonsvanilla extract
½teaspoonbaking powder
¼teaspoonsalt
⅔cupchocolate chips
Instructions
Preheat oven to 350°F. Prepare a 8 x 8-inch baking pan with parchment paper.
Add all ingredients to a food processor except chocolate chips. Blend until smooth.
Stir in chocolate chips. Spread in prepared baking pan.
Bake for 15-18 minutes. Cool before cutting.
Notes
If using rolled oats instead of quick oats, processing oats before adding the remaining ingredients can help make batter smoother. If you find the batter is not as smooth as you like, I recommend processing the black beans (with oil as needed) until smooth as well.A food processor will produce a smoother batter, but a high-powered blender will work in a pinch.
