Ingredients
3cupsrolled oats
1cupnutspecans, almonds, or walnuts
1cupseedspumpkin, sunflower, or flax
2tablespoonsuncooked quinoaoptional
1teaspoonkosher salt
1teaspooncinnamon
½cupmaple syrup
¼cupolive oil
1egg white
Instructions
Preheat oven to 300℉. Line a baking pan with parchment paper.
Beat egg white until foamy.
In a large bowl, stir together oats, nuts, seeds, quinoa, salt, and cinnamon.
Stir in maple syrup, olive oil, and egg white and mix until well combined.
Spread into an even layer on a baking sheet and press down.
Bake for 40-50 minutes or until golden brown.
Let cool on the pan. Transfer to an airtight container for 2 to 3 weeks.
Notes
I do not stir the granola so granola "chunks" can form. You can stir every 10-15 minutes as desired.
