1tablespoonolive oil
¼cuponionchopped
1clovegarlic
29ouncesdiced tomatoes
1tablespoonsugar
½tablespoonpaprika
1teaspoonWorcestershire sauce
1teaspoonItalian seasoning
¼teaspooncayenneoptional
salt and pepperto taste
1cuphalf and half
Instructions
Heat olive oil in frying pan over medium heat. Saute onion and garlic until onion becomes translucent, 3-4 minutes.
Place onion mixture, tomatoes, sugar, Worcestershire, and seasonings into Vitamix and secure lid.
Set Vitamix to soup setting and blend.
After blending is done, put blender on the lowest speed and remove lid plug. Slowly add cream through lid plug opening Replace lid plug. Slowly increase speed to the highest speed for 30 seconds.
Notes
If your Vitamix does not have a soup setting, add all ingredients (except cream) to Vitamix and slowly increase speed to high and keep on high for 4-5 minutes until hot.For a shortcut, use ½ teaspoon onion powder and 1 teaspoon of garlic powder and skip step 1 and the addition of olive oil, onion, and garlic.If you prefer a less spicy soup, omit the cayenne. For a spicer soup, increase the cayenne.
